Pumpkin Muffins

 

Muffin Ingredients:

 5 eggs

1/2 cup coconut oil melted or use liquid coconut oil

3 tablespoons butter

1 cup pumpkin puree

2 tablespoons pumpkin spice

1 1/2 - 2 cup swerve confection

1 1/2 tsp vanilla

1/2 cup + 2 TBS coconut flour

1/2 tsp salt

1 1/2 tsp baking powder

 

Filling Ingredients:

3 oz cream cheese room temperature

1 tablespoon heavy whipping cream

1 1/2 tablespoon swerve confection

1/2 teaspoon vanilla extract

 

Melt oil & butter and hold to side. Beat eggs, sweetener, purée, vanilla, and spice.

 

Add oil/butter mix and then add flour, baking powder and salt - mix well.

 

Pour into your muffin silicone liners and prepare filling.

 

Mix all ingredients and stir 1-2 tsp in muffin with knife or toothpick.

 

Bake on 350 18-20 mins until cooked thru with clean toothpick.
