Chicken Marsala

Chicken Marsala

1 lb chicken breasts

2 TBS olive oil

2 TBS butter

1 small onion

1 lb sliced mushrooms

4-6 gloves minced garlic

1/2 cup Marsala wine

1/2 cup chicken broth

1 cup heavy cream

2 TBS parsley for garnish

Salt/pepper chicken.  Add butter/1 Tbs oil to skillet and cook chicken through.  Set to side.

Add 1 Tbs oil to skillet and sauté onion.  Add garlic for 30 seconds.

Add mushrooms cooking for 4-6 mins until soft.  Add wine and boil 3-4 mins.

Mix chicken broth and heavy cream in bowl and add to skillet.  Simmer a few mins to thicken. Season with salt/pepper.  Add chicken back & sprinkle with parsley.
