Mexican Cabbage

Mexican Cabbage

1 lb ground beef

1/2 lb chorizo (optional)

3- 4 TBS taco seasoning

1 small/medium cabbage

1 cup cheddar

Taco toppings of your choice:

   Sour cream

   Jalapeños

   Black olives

Cook your ground beef and chorizo, seasoned with your taco seasoning. Remove grease and put it to the side.

While the ground beef is cooking, thinly slice your cabbage. Using the same large skillet, add 3 tablespoons of avocado and your thinly sliced cabbage. Cover and sauté your cabbage on low heat, seasoned with salt and pepper. Depending on the amount of cabbage, you may have to use more salt to taste.

When the cabbage is wilted to your desired softness, add taco seasoned ground beef. Taste and add more taco seasoning if needed.  Turn down to a simmer.

Add your favorite taco toppings, such as jalapeños, black olives, sour cream, hot sauce ect.  Add some cheddar cheese to the top and cover on a low simmer until the cheese is melted.
