Mexican Chicken With Cheese Sauce

4-5 thin chicken breasts seasoned with:

1 tsp chili powder

1 tsp garlic powder

1 tsp onion powder

1/2 tsp crushed red peppers

1/2 tsp oregano

2 tsp paprika

1 1/2 tsp ground cumin

1/2 tsp pepper

1/4 tsp salt

Cook chicken breasts on grill or sauté in avocado oil until cooked through.  Remove from heat and make cheese sauce.

Cheese sauce:

Melt 2 TBS butter in skillet and add 1 cup heavy cream.  Set to simmer once boil starts. Once starting to thicken add 1 cup extra sharp cheddar.  Once melted add 1/4 tsp salt, 1/8 tsp cayenne pepper, 1/4 paprika.

Pour cheese sauce over chicken topped with parsley if you desire. Serve with your favorite low-carb vegetable or over cauliflower rice.
