Take a rotisserie chicken, Mexican cheese and a little sour cream, wrapping it with your low-carb tortilla. Put about 1/4 cup of enchilada sauce in 9x13 baking dish to put a very thin layer of enchilada sauce to start. Put your enchiladas side-by-side in the dish and add enchilada sauce over the top. Add a little more Mexican cheese and bake in the oven on 350 until the cheese is melted.
