Creamy Chicken Broccoli Skillet

1 lb chicken chunks

2 TBS butter

Broccoli 2 cups

Bacon 5-6 strips

1 TBS minced garlic

1/2-1 C heavy cream

Pepper jack (1/2-1 cup as desired)

Parmesan (1/4-1/2 cup as desired)

2-3 oz Cream cheese

Salt/pepper

Xanthum gum as needed

Cook chicken chunks in butter as well as chopped bacon and move to side.

Remove bacon fat and melt butter for broccoli.  Add broccoli and season with salt/pepper. Sauté 3-4 mins and add garlic.  Sauté another 30 seconds.

Add heavy cream, cream cheese and simmer until melted.  If too thin add a pinch of xanthum gum. For softer broccoli cover pan and simmer.

Once broccoli is softened to your likeness, add chicken, pepper jack cheese, parmesan and bacon.  Cover until melted.

Serve hot
