Chicken Florentine
4 to 6 chicken breasts
Avocado oil
2 tsp Italian seasoning
1 cup Grated Parmesan cheese
1 tsp Garlic powder
Mix the Parmesan cheese and seasonings in a bowl. Season the chicken with the salt and pepper and coat with avocado oil. Dredge the chicken and the Parmesan cheese mix and put into the air fryer on 350 for 10 to 20 minutes until chicken is cooked through.
While the chicken is cooking will make our Florentine sauce:
Four cloves of minced garlic
1 tablespoon of butter
1 1/2 cup of white wine or chicken broth
1 cup of heavy cream
3 ounces soften cream cheese
3 cups fresh spinach
Half of a fresh lemon
Fresh parsley, to garnish
Sauté garlic and 1 tablespoon of butter. Add wine or chicken broth and let simmer and reduce to half. Add soften cream cheese and heavy cream. Once cream cheese has melted, add fresh spinach.
Once spinach has wilted add a squeeze of the lemon and pour sauce over chicken or add chicken to the skillet. You can garnish with parsley if you choose.
