Bruschetta Chicken

Chicken breasts

Avocado oil

Balsamic vinegar

Garlic

Italian seasoning

Salt

Cherry tomatoes

Diced red onion

Chopped basil

Mozzarella cheese

Step 1:

Add 4-6 Chicken breasts in casserole dish or baking sheet

Mix these ingredients in a bowl: 2 tbs avocado oil, 2 tablespoons of balsamic vinegar, 2 tablespoons of minced garlic, 1 teaspoon of Italian seasoning, half teaspoon of salt.

Pour mix over chicken, turning to coat.  Bake the chicken on 400 for 20-30 mins until chicken is cooked through.

Step 2:

Mix these ingredients in a bowl for the Bruschetta: 1 to 1 1/2 cup of haft or diced cherry tomatoes, three cloves of minced garlic, half or less of diced red onion, 1 teaspoon of balsamic vinegar, 1 teaspoon of avocado oil, half cup chopped basil, half teaspoon of salt

Step 3:

When chicken is cooked through remove chicken, add mozzarella cheese, and poor bruschetta over the top. Put back in the oven and cook until the cheese is melted and tomatoes are warm.
