French Onion Meatloaf Muffins

French onion meatloaf muffins

1 lb ground beef

1/3 cup grated Parmesan cheese

1 large onion thinly sliced

2 tbs butter

3 tbs beef broth

2 garlic cloves

1 egg beaten

2 tbs Worcestershire

1/2 tbs Dijon mustard

1 tsp dried thyme

1/2 tsp pepper & salt

1 cup Swiss or Gruyère cheese

Melt 2 tablespoons of butter in a skillet and caramelize onions until they are brown.  Add beef broth and simmer until absorbed by the onions. Set this aside.

Mix all other ingredients, leaving half of the cheese to use later.

Form into meatballs and placing your muffin pan cooking on 350 for 15 min.  Add remaining half of cheese and placed back in the oven until your cheese is melted.
