Buffalo Zucchini Boats
Cut your zucchini and half lengthwise. Carve out your boat leaving a thick edge on both ends.
Drizzle with avocado or salt and pepper and place in the oven on 350 for 10 to 15 minutes.
While zucchini is cooking cook 1 pound of ground chicken seasoned with salt and pepper. Add buffalo wing sauce at your desired amount. Season with ranch seasoning if you so choose as well as parsley.
Remove zucchini from the oven and stuff each boat with the chicken mix. Topped with mozzarella cheese in place back in the oven cooking 10 to 15 minutes. You want your zucchini softened and your cheese melted.
Serve hot with sour cream and additional parsley as a topping.
