Zucchini Mac & Cheese

Zucchini

Yellow squash

2 tbs butter

Heavy cream

Salt/pepper/paprika/garlic powder

Cheddar

Quarter thick pieces of zucchini & yellow squash.  Cook them in 2 TBS butter until they begin to soften but the rind is still tough.  Add 1/2 cup - 1 cup of heavy cream.  Season with pinch of paprika, salt/pepper and garlic powder.

Cook on low heat until till the rind has soften but not mushy.  Add cheddar cheese and serve warm.
