White Chicken Enchiladas

Low Carb White Chicken Enchiladas 👇

Shredded chicken breasts (2-3)

Small onion

Chopped jalapeño’s (as much as you’d like)

1 can green chilis

2 garlic cloves

Creamy sauce:

1 1/2 c heavy cream

1/2 c sour cream

1/4 tsp cayenne pepper

1/2 tsp chilli powder

1/2 tsp cumin

1 cup Colby jack cheese

Cook onion in 1 tbs olive oil.  When soft add chilis, jalapeños, and minced garlic cook for 3-4 mins. Mix in chicken and sit to the side.

Make creamy sauce in sauce pan until thickens.  Add a small amount of sauce to the chicken mix.  You’ll use the rest to pour over top of the dish.

Put chicken/onion mix in tortillas, add a small amount of cheese if you’d like.  Roll up and put seam side down in 9x13 baking dish.

Pour the remaining cream sauce over top of the tortillas and bake 350 for 15-20 mins.
