Lemon Pound Cake Muffins

Lemon pound cake muffins

1 1/4 almond flour

1 tsp baking powder

1/4 tsp salt

4 Tbs softened butter

3/4 c sweetener of choice (Keto)

4 oz softened cream cheese

1 tsp vanilla extract

1 tsp lemon extract

4 eggs room temp

Preheat oven 350

In medium bowl combine flour, salt, baking powder.

In large mixing bowl or kitchen aid bowl beat butter & sweetener until light and fluffy.

Add cream cheese and extracts.  Add eggs one at time mixing well.  Lastly add in dry ingredients and prep your muffin pans.

Bake on 350 for 20-25 mins.  Makes approximately 12 pound cakes.
