Homemade Mayo

Using an immersion blender, put all of these ingredients into a tall glass jar or your immersion blender canister

One large egg

One cup of avocado oil

1 tablespoon of Dijon mustard

1 tablespoon of white wine vinegar

1/2 teaspoon of pink Himalayan salt

1 tsp fresh squeeze lemon

Use your immersion blender starting at the base of the jar slowly pulling up until the entire contents is mixed and fluffy like a cloud of mayo

Taste and add more salt & lemon as desired
