Chicken With Mushroom Spinach Sauce

Chicken in Mushroom Spinach Sauce

Season thin chicken breast (4-6) with salt/pepper.  Sauté in butter until cooked through.  Move to plate.

Add sliced or diced mushrooms (8-10oz) into buttered pan cooking until soft, seasoned with salt.  Add them to the chicken plate for later.

Creamy Parmesan Sauce:

4 tablespoon butter

4-6 cloves garlic, minced

½ cup chicken broth

1 cup heavy cream

½ cup grated Parmesan cheese

½ teaspoon salt

1-3 cups chopped spinach

Add butter to the same skillet.  Sauté garlic until fragrant.  Add heavy cream and chicken broth allowing to simmer on medium to low heat until starting to thicken.  Add Parmesan and chopped spinach.  Add more salt if needed. Once mixed well add back chicken and mushrooms.  Serve warm and to
