Chicken with a creamy spinach mushroom sauce

2 TBS avocado oil

4-6 thin chicken breasts

8-12 oz sliced mushrooms

Salt and pepper the chicken breast Sautéing in olive oil until cooked. Remove from heat and add your mushrooms cook the mushrooms for five or 10 minutes until they soften. Move the softened mushrooms to your chicken plate.

4 TBS butter

4-6 cloves of garlic

1/4 cup chicken broth

1 cup heavy cream

1/2 cup parmesan

3 cups chopped spinach (or more)

Melt butter in the same skillet and sauté garlic for about one minute.  Slowly add chicken broth and heavy cream. Simmer for a couple of minutes and then add Parmesan cheese.  Salt to your liking and then add chopped spinach.

Cook until the spinach has wilted and then add back your chicken and mushrooms. You can top off with more Parmesan cheese & parsley if you desire. Serve hot.
