Cajun Chicken Alfredo

Spaghetti squash:

Microwave for 5-7 minutes. Cut in half, removing seeds & baking on 350 for 35-40 minutes.

Chicken:

1-2 lbs of chicken chunks

2 TBS avocado oil

Cajun seasoning (Your choice on brand & amount)

Salt/pepper

Cook chicken in oil and seasoning. Remove from skillet to cook Alfredo sauce.

Alfredo:

Melt 1 tbs butter

Sauté 1-2 garlic gloves

1-2 oz cream cheese

1/2-1 cup heavy cream

Add 1/2-1 cup parmesan cheese

(You can increase ingredients depending on how much sauce you’d like to make)

Scrape out the inside of your spaghetti squash with a fork, creating your noodles. Add chicken and pour over Alfredo sauce. Serve hot
